Identifying good Bird's Nest is an art. It is identified by its origin, colour and shape.

By its origin

Bird"s Nests have various origins. And they are:

Cave Swiftlet: These are darker or yellowier, more feather and impurities, firmer and crispy while eating.

House Swiftlet: These are whiter, softer textured, less feather, smoother and tender while eating.

Grass Swiftlet & Hair Swiftlet: In these two categories impurities are higher. They are generally used mixing with other things or grinded for other purposes.

By its color

Bird's Nests come in different colors like:

White Nest (also called "Noble Bird's Nest"), Yellow Nest, Orange Nest & Blood Nest

By its shape

Bird's Nest come in shapes of ball cup, lumpy, stripped, shredded, minced etc. They are they trimmed for sale. The leftovers thus are made into nest strips, nest cake or shredded nest mixture. Though they are all bird's nest, but since they are made of nest rims, the appearances are coarse and they are harder.

Bird's Nest are also categorized as:

House Nest

House Nest is built in wooden-roofed swallow farmhouses that are humid and dark.

The temperature, brightness and humidity are similar to the conditions found in the bird's natural cave habitat. Swiftlet leaves the farmhouse to hunt food in the wild in the morning and returns by evening. The farmhouse is a better habitat. Hence the house nest contains fewer impurities. They are cleaner, have an intact boat or spoon shape, and have a high swelling capacity.

Cave Nest

Cave Nest is constructed in caves and on cliffs. Owing to natural environment, it is firmer, harder and deeper in color. Not as well shaped as the House Nest, it has higher impurities. It is crunchy with a low swelling capacity, thus lengthening its cooking time.
